I think Messerbaer60 put it best that availability is a company decision that we have to accept it.
I work for a company that prides itself on offering products with a high number of options to chose from to personalize it, but there are limits based on markets. Successful companies like Victorinox have marketing and research departments that determine what sells and doesn't sell in certain markets and tailor their product offerings accordingly. We on the other hand, are enthusiasts and want it all, or want what we can't have. Without it we may be missing the thrill of collecting - finding that special piece. I also need to remember that the internet distorts reality. I spend a fair amount of time here, on reddit and other forums dedicated to Victorinox and those places are of course echo chambers. If one person says to bring back the yeoman, there's bound to be 2 or 3 more in support, but that doesn't mean that there is a market for them. They used to be sold alongside the Explorer and I'm sure someone took a look at the numbers and decided that both were not needed.
Who knows, maybe future market research shows that demands have changed and we will see certain editions in our markets. In the meantime, I'll keep checking the secondary market to see if I find a old original or custom model. Happy hunting.
