I soak the knife in hot water for about 10 minutes or something like that (with tweezer, toothpick removed), I then dry it of and pry a small blade from another knife in between, starting at one of the ends where the hole of tweezers/ toothpick is, and then twisting gently alongside the rivets.
When they're off, I then dry & clean the 'naked' knife, I press on the new scales, most of the time they're not yet flush, so I wrap it in a blanket and hammer on it with a wooden hammer till flush 😬
Off coarse afterwards dry everything another time and oil all the hinges, admire my work and put it away. Never had scales, old or new break on my, so I keep them all.
Sometimes I sand & polish old scales instead of replacing them.
